Serious Eats just posted a guide to deep frying. Its true! You don't need a deep fryer, and you can fry at home! Sue Veed writes that all you need is a stock pot, a thermometer, and some peanut, vegetable, grapeseed, or pecan oil, but I think you should give frying in coconut oil or lard a try. Also, I don't even bother with a thermometer. I just drop a pea-sized amount of the better in the hot oil and see if browns correctly. Then I keep checking the food throughout the cooking process to make sure it isn't burning.
